Mai Tai Without Fear N°1

It's been a while I hadn't posted on the blog.
Also, it's been a while I wanted to try a Daredevil variation of the Mai Tai.
The Mai Tai... currently my favourite cocktail, on par with the Manhattan.
The problem with the variations I tried in the past was that most of the time they were too sweet.
But a true Daredevil fan never gives up, so I bring you : the Mai Tai Without Fear!
To make it "Without Fear", I was inspired by "Bitter heavy" cocktails like the "Stormy Mai Tai" and I went with not one but two bitters in large doses. Also, I switched Orange Curacao with Red Curacao.

Et ça faisait aussi un moment que je voulais essayer une variante du Mai Tai version Daredevil.
Le Mai Tai est en ce moment mon cocktail préféré (à égalité avec le Manhattan).
Le souci, c'est que mes essais précédents m'avaient souvent paru trop sucrés.
Mais un fan de DD n'abandonne jamais, voici donc le Mai Tai sans peur!
Pour mériter ce titre, il s'inspire de cocktails fortement dosés en bitters mais avec deux sortes de bitters et du curacao rouge à la place de l'habituel curacao orange.

Here's the recipe / la recette :
- 1 oz good rum / 3 cl de rhum
I went with Appleton Estate 12 which is supposed to be a very good mixing rum
/ d'après certains spécialistes, l'Appleton Estate 12 est de l'or en barre
- 1 oz lime juice / 3 cl de jus de citron vert
- 1/2 oz Cartron Rubis Curacao / 1,5 cl de Curacao Rubis Joseph Cartron
(I tasted on it's own, it's delicious, refine and not as chemical as some other curacaos... / je l'ai testé nature, il est excellent, sans goût chimique comme certain curacaos)
- 1/2 oz orgeat syrup / 1,5 cl de sirop d'orgeat
- 1/4 oz simple syrup / 0,75 cl de sirop de sucre de canne
- 1/2 oz angostura bitter / 1,5 cl d'angostura bitter
- 1/2 oz Peychaud's bitter (add more red to your cocktail) / 1,5 cl de Peychaud bitter (pour encore plus de rouge)
Shake and strain over crushed iced in double rocks glass.
Shaker et filtrer sur de la glace pilée dans un verre rocks double.
Garnish : orange peel, cherry
Déco : zeste d'orange, cerise

A great red color/un très beau rouge

Tasting notes : a complex drink where the angostura dominates but also leaves room for the rum to express itself. Peychaud is in the background but you can feel it somewhere. Syrups and curacao don't really make them noticed but surely counterblance the bitterness.
I might try this again with Peychaud only, for a more rummy drink and a brighter red.
Notes de dégustation : un cocktail complexe, où l'angostura domine tout en laissant le rhum s'exprimer. Le Peychaud reste en arrière plan tandis que le curacao et les sirops sont très discrets mais contrebalancent sûrement l'amertume des bitters.
A rééessayer avec seulement le Peychaud, pour laisser le rhum s'exprimer davantage et pour une teinte de rouge encore plus vive.
